The Domaine des Carabiniers is born in 1920 when the winemakers who owned the vineyards around this old inn developed their cellar in the old stables walls. Since 1997, the organic viticulture became necessary: pollution, soil impoverishment. Today from this organic farming method they have moved to a biodynamic approach, to preserve their natural assets essential to the production of Grand Crus.
Gape Variety: 50% Grenache, 25% Shiraz, 15% Mourvèdre, 10% Cinsault
All the vines are night harvested to prevent oxidation and the massive use of SO², fermentation is done with indigenous yeasts at high temperature 32 degrees, followed by a long maceration, up to 15 days.
Blackberry and blackcurrant aromas come forward from this deep crimson red wine. A subtle blend of fruit and spices await the palate.
